Snickerdoodle Poke Cake

INGREDIENTS: For the Cake:

  • 1 box white cake mix
  • 1 cup milk
  • 1/2 cup melted butter
  • 1 tablespoon vanilla extract
  • 2 teaspoons ground cinnamon For the Filling:
  • 1 package vanilla instant pudding mix
  • 2 cups milk For the Frosting:
  • 1/2 cup butter
  • 3-4 cups powdered sugar
  • 1/2 cup heavy cream
  • 2 teaspoons vanilla extract
  • 1 teaspoon cinnamon

PREPARATION:

  1. Preheat the oven to 350°F and spray a 9×13-inch pan with cooking spray.
  2. In a large bowl, whisk together all the ingredients for the cake until well combined. Pour the batter into the prepared pan.
  3. Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
  4. Allow the cake to cool for 15 minutes.
  5. While the cake is cooling, prepare the filling by mixing the vanilla instant pudding mix with milk in a medium bowl until smooth.
  6. Once the cake has cooled, use the handle of a wooden spoon to poke holes all over the cake, then pour the prepared filling over the entire cake.
  7. Cover the cake and chill it in the refrigerator for about 2 hours or until the pudding is set.
  8. For the frosting, use an electric mixer to combine all the frosting ingredients until light and fluffy.
  9. Frost the chilled cake and store it in the refrigerator until ready to serve.
