Crispy Baked Asparagus Fries

Serves 4 Preparation Time: 15 minutes Cooking Time: 10 minutes

INGREDIENTS:

  • 1 bunch asparagus
  • 2 eggs, beaten
  • 2 teaspoons water
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups panko breadcrumbs
  • 1/2 cup parmesan cheese, freshly grated
  • FOR THE LEMON AIOLI:
  • 1/2 cup mayonnaise
  • 1 clove garlic, minced
  • Juice of 1/2 lemon
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt

  1. Preheat the oven to 400°F (200°C) and grease a large baking sheet with nonstick spray.
  2. Wash and dry the asparagus, then snap off the woody ends. Set aside.
  3. In a shallow dish large enough to fit the asparagus, whisk together the eggs and water. In another dish, stir together the flour, garlic powder, salt, and pepper. In a separate dish, combine the panko breadcrumbs and grated parmesan cheese.
  4. Dip an asparagus spear lightly in the egg mixture. Shake off excess, then dredge it in the flour and seasoning mixture. Shake off excess again, then dip it back in the egg, once again shaking off excess.
  5. Roll the asparagus in the panko breadcrumb mixture and press the crumbs to stick. Place them on the prepared baking sheet. Repeat with the remaining asparagus spears.
  6. Bake until the asparagus is golden brown and crispy, for about 10-12 minutes.
  7. Meanwhile, stir together the lemon aioli ingredients in a small bowl.
  8. Serve the baked asparagus with the lemon aioli for dipping. Enjoy your delicious and crispy asparagus fries!
