Creamy Pesto Veggie Skillet

Serves 2-4 Preparation Time: 20 minutes

Ingredients:

  • 1 jar (8 oz) pesto sauce
  • 1 cup heavy cream
  • 2-3 medium carrots, chopped
  • 1 medium onion, sliced
  • 8 oz small mushrooms
  • 1/3 cup parmesan cheese, grated
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • Kosher salt and freshly ground pepper, to taste

  1. Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add the onions and carrots. Cook until they start to soften, about 5 minutes.
  2. Add the mushrooms and continue to cook until all the vegetables are fork-tender, for an additional 3-4 minutes. Add the minced garlic and cook for another minute.
  3. Stir in the pesto sauce and cream, then reduce the heat to medium. Let the mixture simmer, stirring occasionally, until the sauce thickens to the desired consistency, approximately 3-5 minutes.
  4. Stir in the grated parmesan cheese until melted. Season with salt and pepper to taste.
  5. Serve the creamy vegetable pesto sauce over cooked pasta or your favorite grain. Top with additional parmesan cheese if desired. Enjoy your delicious meal!
